Richard is a master of the Italian and Spanish style charcuterie and is known to elevate all cuts of meat to amazing levels with great finesse and a healthy amount of experience thrown into the mix.
His cured meat deli (which you will find next door to the Spice Route Tasting Room) is a carnivore’s happy place and you will find pasture-raised, hand-salted hung and curing meats to your hearts content.
Highly suggest doing a tasting, it is amazing to hear about these traditional methods and practices and get a front seat tour of the items on offer.
Some special things that stood out were the Nduja (very spicy spreadable salami) the Salsiccia (a fresh sausage with red wine and fennel) and the venison carpaccio (cured loin with red wine and spices).
All-in-all an eye-opening experience well worth a visit!
